quince jelly and paste





this week I made some quince paste (marmelada in portuguese) and quince jelly using some quinces I picked on saturday. making these preserves was a tradition at home when I was a very young girl and somehow it remains for me an announcement of the beginning of autumn ... here are the traditional recipes from my childhood days:

marmelada (quince paste)
you will need about 4kg of quinces and have in hand about 2 kg granulated sugar (I will tell you the exact sugar quantities during the recipe description)

• wash, dry, peel, core and cut the quinces into large chunks (reserve the peels and cores for the jelly below)
• place the prepared quince into a heavy based large wide pan
• cover with water and let it simmer covered until the quince is very soft, about 30 minutes
• drain (reserve the water) and puree the quince into a pulp
• now weight the pulp and for each 1 kg quince pulp add 800gr sugar
• return the pulp and sugar to the wide pan and let boil slowly stirring frequently (be careful so it doesn't stick to the bottom of the pan and when stirring be careful not to get burned as it tends to spit a lot - a good idea is to place a clean cloth over the pan when not stirring)
• you know the paste is ready when crossing the pan with the wooden spoon you can see the bottom of the pan for a few instants, the longer you can see the bottom of the pan the thicker the paste will be
• when ready let it rest for about 5 minutes before transferring into some clean and dry bowls
• place a waxed disk on top and label

quince jelly
you will need the cores and the peels of the quinces and have ready just over 1 kg of granulated sugar

• place the cores and peels of the quinces in a wide heavy bottom pan and cover with the water that was reserved from draining the quinces when making the paste ... if needed just add more fresh water
• let it simmer, uncovered until the liquid has reduced by almost half
• place a cheesecloth (or a clean old kitchen towel) over a sieve on top of a bowl
• pour the liquid and peels over the cheesecloth and squeeze as much liquid as possible through the cloth and sieve ... discard peels and cores
• measure the liquid and for each 1 litre add 800g of sugar
• return the liquid and sugar to the pan and let it simmer slowly until it has reduced for almost half again ... once in a while stir and remove some froth that forms on the surface
• test the jelly by placing a little on a saucer, let cool a bit and when pushed if it wrinkles it is ready
if not just let it boil for a few more minutes
• when ready, remove all the froth that formed on the surface, let it rest for about 5 minutes and place into clean, sterilized jars (to sterilize the jars I simply place boiling water inside and thoroughly dry them), close the jars and label

I think I will be giving some of these as christmas presents ;) ... enjoy! *

esta semana fiz geleia e marmelada com marmelos que apanhei no sábado.
o fazer da marmelada e geleia transporta-me aos tempos de criança quando lá em casa sempre se fazia e ficou para mim como que um anúncio do outono ... aqui ficam as receitas tradicionais desses tempos:

marmelada
cerca de 4kg de marmelos e 2 kg de açúcar granulado

• lavar, secar, descascar, descaroçar e cortar os marmelos em pedaços (guardar as cascas e caroços para fazer a geleia)
• colocar os marmelos num tacho largo de base pesada e cobrir com água
• tapar e levar a cozer em lume brando até os marmelos estarem macios, cerca de 30 minutos
• escorrer a água e reservar (para usar na geleia)
• reduzir os marmelos cozidos a polpa e pesar
• por cada quilo de polpa de marmelo juntar 800gs de açúcar
• colocar a polpa e o açúcar no tacho e levar ao lume brando mexendo com frequência (cuidado para não deixar queimar e quando estiver a mexer ter atenção pois "espirra" e pode queimar -normalmente coloco um pano da cozinha por cima do tacho para proteger)
• a marmelada está pronta quando ao passar com a colher de pau o fundo do tacho é visível por breves instantes, quanto mais tempo estiver visível mais compacta fica
• retirar do lume, deixar arrefecer cerca de 5 minutos e colocar em tigelas
• cobrir com um disco de papel vegetal e etiquetar

geleia de marmelo
as cascas, os caroços dos marmelos e a água onde cozeram e cerca de um pouco mais de 1 kg de açúcar

• colocar as cascas, caroços e a água de cozer os marmelos num tacho largo e de base pesada até cobrir (se necessário acrescentar um pouco mais de água fresca)
• levar a lume brando e deixar cozer até o líquido ter reduzido a cerca de metade
• colocar uma gaze (ou um pano de cozinha lavado) dentro de um passador largo em cima de uma tigela grande
• despejar as cascas e o líquido e deixar escorrer bem o máximo líquido possível através do pano ... descartar as cascas e caroços
• medir o líquido e por cada litro juntar 800gr de açúcar
• levar o líquido e açúcar ao lume brando no tacho destapado até ter reduzido a metade novamente mexendo ocasionalmente e retirando a espuma que se forma no topo
• para saber se está prontar colocar um pouco da geleia num pires e empurrar com o dedo, se fizer umas "rugas" está pronta, senão levar novamente ao lume e deixar apurar mais um pouco
• retirar do lume, limpar a espuma que se formou por cima e deixar arrefecer cerca de 5 minutos
• encher frascos esterilizados (eu apenas mergulho-os em água a ferver e seco-os muito bem) fechar bem e etiquetar

penso que alguns destes vão ser prendas de natal ;) ... divirtam-se!

melon jam with cloves






I live in an area where melons are produced and considered the best (and famous!) in the country.
this year I made some jam my mother used to make as a way of using up excess and when melons were not very sweet ... I added a few cloves to it! (just follow any basic jam recipe and throw in a few cloves)

vivo numa zona onde há grande produção de melão, considerada a melhor (e mais famosa!) do país.
este ano fiz doce de melão que a minha mãe costumava fazer como forma de usar excedente e quando o fruto não era muito doce ao qual acrescentei alguns cravinhos! (sigam qualquer receita de doce básica e juntem uns quantos cravinhos)
