chestnut and chocolate cake





it is delicious ... moist, soft, not overly sweet and rich! perfect for a special celebration.

é delicioso ... húmido, macio, não demasiado doce e rico! perfeito para um dia especial.

*chestnut and chocolate cake* (the recipe, with slight changes, is from here !)
. 1 tbsp cocoa
. 200g cooked chestnuts, peeled
. 2 tbsp caster sugar
. 100ml full fat milk
. 100g butter
. 150g good quality dark chocolate chopped
. 3 large organic eggs
. 75g caster sugar
. 1 pinch sea salt

. preheat the oven to 180°C/ 350°F
. butter a 20cm spring form tin and dust with the cocoa and take out the excess
. place the chestnuts in a small frying pan, add the 2 tablespoons sugar and milk and cook over a low heat for 5 minutes until the chestnuts start to soften
. remove from the heat and place into a tall cup of a blender or in a bowl of a food-processor and whiz until smooth . let it cool
. put the butter and chopped chocolate in a bowl over a pan of simmering water making sure the bottom of the bowl doesn’t touch the water and let it melt completely
. stir until smooth, remove from the heat and cool slightly
. whisk eggs, sugar and salt until thick, pale and doubled in volume
. carefully mix in the chestnuts puree until thoroughly combined
. gently add the melted chocolate mixture and fold in until smooth
. carefully pour into the prepared tin and bake on the middle shelf of the preheated oven for about 30 minutes until risen (it doesn’t rise high!) and the top has formed a light crust
. remove the cake from the oven and set the tin on a cooling rack and leave to cool to room temperature
. dust with cocoa powder and serve

*bolo de chocolate e castanhas* (a receita, com ligeiras alterações, é daqui!)
. 1 colher (sopa) cacau em pó
. 200g castanhas cozidas e descascadas
. 2 colheres (sopa) açúcar
. 100ml leite gordo
. 100g manteiga
. 150g bom chocolate para culinária
. 3 ovos grandes
. 75g açúcar
. 1 pitada de sal

. aquecer o forno a 180°C
. barrar uma forma de fundo solto (20cm) com manteiga e polvilhar com cacau em pó
. colocar as castanhas numa frigideira juntamente com as 2 colheres de açúcar e o leite . levar ao lume brando durante 5 minutos  até as castanhas começarem a ficar macias
. retirar do lume e triturar com a varinha mágica . deixar arrefecer
. colocar o chocolate partido e a manteiga a derreter numa tigela sobre uma panela de água a ferver (cuidado para a tigela não tocar na água!)
. quando estiver derretido, mexer bem até estar macio e deixar arrefecer um pouco
. bater os ovos com o açúcar e o sal até estarem esbranquiçados e terem aumentado de volume
. misturar com cuidado o puré de castanhas nos ovos e incorporar com cuidado o chocolate derretido
. colocar na forma e levar ao forno pré-aquecido durante 30 minutos (não cresce muito!)
. retirar do forno e deixar arrefecer completamente
. polvilhar com cacau em pó e servir
